During the working week it is very easy to grab a sandwich and take it back to our desks or to dash out and enjoy one of Berlin’s various food options. The weekend is then the perfect chance to enjoy a healthier food option. But when do we still find the time?
Since moving to Berlin I have grown to love the whole ‘everything is closed on Sundays apart from cafes and fleamarkets’ thing. It’s great! The one day in the week when I can catch up with blogging, sorting through my photos, catching up on emails to friends, walks in the sunshine (when it actually shines!) and just general laziness. But this means that Saturday is a day to fit in everything else that I have no time for during the week and cannot do on a Sunday.
This simple smoked salmon salad is the healthy option you look for during the weekend but is also quick and easy for a busy weekend. I add a bit of chilli oil to the salad to give it that extra kick.
Quick, fresh, light and easy to make – this is a regular weekend lunch for me. Enjoy! x
Ingredients: serves 2
fresh smoked salmon (flaked)
1 ball mozzarella (cut into slices)
Watercress (about a handful)
Rocket (about a handful)
Half a cucumber (roughly diced)
6 cherry tomatoes (halfed)
Fresh basil leaves (small handful)
Ground black pepper
Juice of half a lemon
- Add all the ingredients to a large mixing bowl and mix well.
- Plate up into small salad bowls and add some extra chilli oil if needed.
