I am a huge fan of a Mezze. Lots of little small plates all gathered together with different flavours and ingredients ready for a feast to be shared with friends and family. And for me that is what food is all about. It is there to bring people together over delicious food, finding new tastes and flavours and experimenting with different ingredients. Yet while a Mezze is typically an Eastern Mediterranean and Middle Eastern style of eating it doesn’t have to be just limited to this. Honey and Thyme Baked Feta with Tomatoes
When I was in Paxos I came across fried feta for the first time. I am usually quite boring when it comes to feta, simply adding it to salads or as a topping to some vegetables like in a Greek Briam. The only time I have really made proper use of feta cheese in a dish is in a Spanakopita, where in my opinion, it is more of a star ingredient than the spinach itself! I really liked the fried feta but it was the Saganaki cheese that I kept going back for ever since I had a delicious dish of Baked Saganaki with Honey. Paprika and Thyme Roasted Almonds
I am a big fan of charcuterie and cheese boards, or meat and cheese nights as my husband and I fondly call it. It is so much more than simply throwing a bit of cheese and crackers together. Of course cheese and cured meats are the main part of this delicious gathering of quality foods but I also love to serve some pickled gherkins, olives and these Paprika and Thyme Roasted Almonds on the side.
