Greek Orzo Salad
Greek Orzo Salad is one of my go to packed lunches. I make a big batch on a Sunday and store in the fridge for 2-3 days. It is a delicious and filling lunch and packs up nicely to take to work. The orzo pasta also helps the salad to keep its shape and give it a bit of a firmer texture which makes it the perfect dish when wanting to store in the fridge for a few days.

When I was in Paxos I came across fried feta for the first time. I am usually quite boring when it comes to feta, simply adding it to salads or as a topping to some vegetables like in a Greek Briam. Armed with a tin of chickpeas you can be assured that a healthy and delicious meal is on it’s way! I love chickpeas. They are packed full of protein and high in fibre, iron and zinc. They are also incredibly filling and easy to prepare, making them a perfect lunch or midweek dinner. I find that chickpeas are really versatile.
