Opening the fridge on boxing day and wondering what on earth to do with all that leftover turkey is as much of a Christmas tradition as the big dinner itself! All this talk about the Queen’s upcoming Diamond Jubilee got me thinking about ‘typically’ British food. If there is one food to associate with the Queen and her Jubilee then it has to be coronation chicken. This retro dish is popular at parties, will be served at street parties for the diamond jubilee and can be found in any supermarket/cafe/bakery as a sandwich filling.
