I like to call this my grown-up chocolate cake recipe. It is bursting with nuts and spices and is rich and aromatic, making it the perfect cake for Christmas! This is very much inspired by the traditional Italian dessert, Panforte and it really is pure indulgence. The middle is gooey with the chunks of chocolate while the rest of the cake has that slight crunch from the nuts. It’s beginning to look a lot like Christmas! I have been visiting plenty of Christmas markets lately and really getting into the festive spirit. I love Christmas in Germany and the Germans really know how to celebrate it well. Not really all that surprising seeing as it is home to the famous Christmas markets that now pop up in any major town or city in the UK. Or the fact that it was the Germans who came up with the tradition of having a Christmas tree in the home or an advent wreath with candles. I love the idea of bringing the outdoors inside and the fresh smells from the pine or fir trees….

Pumpkins are not just for halloween! Every autumn I load up on butternut squash and pumpkins. They are delicious, healthy and versatile meaning that you can add them to lots of different meals. From soups to risotto, in a curry and of course using the seeds! After carving my pumpkin this weekend I roasted the pumpkin seeds but the seeds from most types of squash also work really well.
