This salad is one of my favourite dishes. It is full of healthy fats and protein and is a real go to lunch of mine as it gives me plenty of energy while keeping me going until dinner time. I have recently cut down on my avocado consumption. Last year I got a little swept up with the whole clean eating craze that I was adding avocado’s to everything and getting through them like there was no tomorrow. In actual fact, no one needs that many avocado’s in their life! But I love them and especially how versatile they are….

Avocado, Spinach, Smoked Salmon and Scrambled Eggs on Toast
I love this time of the year in Berlin as it is packed full of public holidays although it is probably one of the things I miss the most about the UK. The UK has plenty of Bank Holiday Monday’s whereas in Germany a holiday is always on a specific date and therefore can easily fall on a Saturday or Sunday. This year May 1st falls on a Monday which means we actually get a long weekend! And what better way to spend the weekend than enjoying a lazy brunch?…
Baked Mushrooms with Avocado, Spinach and Walnut Pesto
I first made these Baked Mushrooms with Avocado, Spinach and Walnut Pesto when I was recipe testing for catering to different dietary requirements. A couple of people I know have had to completely change their diet due to health reasons and must carefully watch exactly what they eat. But there seems to be a growing divide when it comes to what we eat. Those who follow a clean and raw diet are seen to be judgemental and missing out on all the pleasure in life. Not true. Those who are able to eat sugar, butter, meat, pastry can sometimes be misjudged with others thinking this is only what…
Courgetti with Avocado and Cashew Pesto
We have Hemsley and Hemsley to thank for spiralized recipes being so popular and bringing pasta back to those who are gluten intolerent! I don’t have a gluten intolerence but I absolutely love courgetti. I have always tried to cut back on the carbs by using lots of fresh vegetables and courgetti is perfect for this. It may seem like a bit of a ‘health fad’ at the moment but it really is a great alternative to some heavy glutenous pasta and a great way to pack in more of your five a day. …
Ginger Salmon with Wasabi and Avocado Wild Rice
I am a big fan of wasabi and the kick that it gives to any dish. It has such a fresh taste to it which is why this recipe works so well with it. The rice salad is kept simple with some avocado and spring onions and seasoned lightly with a wasabi dressing. This dressing is one of my favourites and a regular on my meal plans! Soy sauce is lower in calories compared to olive oil and you only need a tiny bit of it. Top that up with a bit of lime juice and a tiny amount of wasabi paste and you have yourself a delicious and healthier dressing. …
French Toast with Smoked Salmon and Avocado
I love a weekend breakfast. It is what Sundays are all about: lie in, lazy morning listening to the radio, reading the paper and a day to relax and do whatever you want! All shops are closed over in here in Berlin on Sundays which leaves plenty of time to go for a long Sunday walk or to a cafe. …
Avocado, Smoked Salmon and Egg Salad
I love smoked salmon so I enjoy any excuse to eat it. It is full of protein and tastes delicious! This salad is what I call my ‘Monday night’ dinner. You know the kind of meal, the one that has to be super quick after a long day in the office and something easy to rustle up. It is all about the Monday night hassle free dinner in my apartment! It is also healthy which is a great way to recover from any over indulging over the weekend! …
Beef Chili Tacos
The weather is really warm at the moment and so I decided to have a Mexican themed dinner. Making the beef for the tacos was not as bad as I thought it would be in this heat. I make mine very simple so you are never standing over a pan for too long! The end product is great for a warm summer evening. …
