Strawberries are in full flow here in Germany and so I made some strawberry cupcakes at the weekend. Yum!
Ingredients:
125g butter
100g dark chocolate (chopped into pieces)
200g stawberry jam
100g caster sugar
2 large eggs
150g flour
1 tbpsn baking powder
Topping:
100g milk chocolate (chopped into pieces)
75g butter
strawberries (sliced)
- Preheat the oven to gas mark 4 / 180 degrees celsius
- Heat butter in a deep pan. Once the butter is nearly melted add the chocolate and melt. Once melted take off the heat
- Add the jam, sugar and eggs to the melted chocolate and mix well
- Fold in the flour and baking powder and make sure everything is mixed well
- Pour the mixture into cupcake cases and bake for 25 mins
- Leave to cool for 30 mins
- For the topping: melt butter and then add the milk chocolate. Make sure this is melted and then scoop on the top of each cupcake
- Place a strawberry slice on top
- Leave to set for another 30 mins
