Or Slut’s Spaghetti as we have to come to know it. ‘Puttanesca’ means lady of the night and that this is the dish cooked by women who have not spent all day in the kitchen and tend to use things out of jars. You really cannot go wrong with this dish and it is a perfect one for an after work supper.
Ingredients:
1 carton tomato passata
anchovies
black olives
3 cloves garlic
garlic olive oil (or standard olive oil will do)
handful of capers
3 tomatoes (chopped into small pieces)
1 tbpsn tomato puree
fresh basil (to serve)
spaghetti (enough for each serving)
1 small onion (finely chopped)
ground black pepper
1 tspn chili flakes
- Heat the oil in a large pan and add the garlic. Add a pinch of salt and then add the onions. Leave until onions are golden
- Place the spaghetti into a pan with boiling water and put on a medium heat
- Add the tomatoes to the pan. Leave for 2- 3 mins
- Pour the tomato passata into the pan with the onions and add black pepper, chili flakes and tomato puree
- Add the olives, capers and anchovies and leave to simmer for 5 mins
- Take off the heat and mix well. Add more ground black pepper
- Drain the spaghetti and add to the sauce. Mix it all together and then serve with some fresh basil
