Looking for some inspiration for a Valentines dinner? This is a lovely starter that is quick and easy to make.
I did plan to make this only with scallops but seeing as it is often difficult to find fresh cod or salmon in Berlin I knew I was being a little bit adventurous trying to get hold of some scallops! Luckily I got the last two in a local supermarket so my planned blog post was not completely ruined. I added some tasty king prawns to the recipe. You can make this with scallops only, just prawns or throw whatever you have to hand in the mix.
The crispy chorizo adds a bit of crunch and I cook the scallops and prawns in a parsley butter. Serve with some lambs lettuce so that you don’t take the flavour away from the scallops and chorizo!
Ingredients: serves 2
2 fresh scallops
2 fresh king prawns
Small bunch parsley (finely chopped)
1 clove garlic (crushed)
5 or 6 pieces of sliced chorizo (then diced into small cubes)
Small handful of lambs lettuce
Black pepper
Thin slice of butter
- Heat the butter in a medium size frying pan. Add the chorizo and leave to fry gentle on a medium heat for just a couple of minutes.
- Add the prawns and scallops. Cook on each side for around 2 minutes or until golden on the outside and just cooked inside. When you turn over to the other side add the parsley and mix everything together in the pan.
- Take the pan off the heat. Season with black pepper.
- Plate up the lambs lettuce and then serve the chorizo, prawn and scallop onto each plate.
