This recipe is a great one for the weekend. It often shows up on my Sunday meal plan when I know that I am not going to have the time to make a big roast. Having just moved apartments, having friends to visit and traveling with work the past couple of weeks I can safely say that this dish will be making a re-appearance this weekend in my apartment!
It is very easy and affordable to buy good quality pork over here in Germany. I cook the pork chops with some rosemary, oregano and lemon. The way I cook the pork is quite similar to my Pork Florentine Style. The white beans are cooked with onion, thinly diced bacon and some fresh chilis to give that added kick. They are then seasoned and garnished with plenty of fresh parsley and black pepper.
- For the pork chops:
- 2 pork chops
- Small bunch fresh oregano and rosemary.
- Olive oil
- Juice of 1 lemon
- Black pepper
- For the beans:
- 1 small pack finely diced bacon
- 2 red chilis (finely diced)
- 1 small onion (peeled and finely chopped)
- 2 cloves garlic (crushed)
- 1 tspn paprika
- 1 red pepper (finely sliced)
- Small bunch fresh parsley (finely chopped)
- Juice of half a lemon
- 1 500g tin white beans (drained)
- Olive oil
- Heat a large frying pan with 1 tbpsn olive oil. Add the onions and garlic with a pinch of salt. Leave the onion to soften for a couple of minutes then add the red pepper, bacon and chilis. Squeeze in the juice of half a lemon and keep stirring regularly.
- In the meantime, heat a medium sized frying pan with 1 tbpsn olive oil. Rub the pork chops with some black pepper, rosemary and oregano. Add to the hot pan and then also add the rest of the herbs and the lemon juice to the pan. Cook the chops on each side for around 4-5 minutes.
- After the onion and bacon have cooked for around 5 minutes add the beans. Mix everything in the pan properly and keep cooking for another 5 minutes.
- Once the pork chops are done take them off the heat. Plate up the chops.
- Take the beans off the heat and stir in the fresh parsley and black pepper. Plate up with the pork chops and serve!
