This is my cheat version. Quick and easy which is perfect for the working week! Serve with some basmati rice or egg fried rice on the side.
Ingredient:
1 lemon
2 chicken breasts (chopped into smaller pieces)
fresh coriander
ground back pepper
4 tbpsn creamy peanut butter
handful of peanuts
2 tbpsn soy sauce
1 clove garlic (finely chopped)
- Heat olive oil in a pan and add the chicken. Cook with the juice of half a lemon
- Cook the chicken alone for 5 mins
- Then add the soy sauce, black pepper and garlic. Mix together and then mix in the peanut butter
- Leave for another 5 mins and then stir in the peanuts
- Serve with fresh coriander, lemon wedges and a few extra peanuts
