This is a simple dish that is rich and indulgent and one for turning your potatoes into something more exciting! Try and serve this with something simple and easy so that you can fully enjoy the dauphinoise as a side dish. I served mine with some green beans and a steak as a real treat. You can also serve with this salmon fillet or a simple green salad. This is comfort food at it’s best.
Ingredients:
5 or 6 medium/ large potatoes
200ml double cream
100ml milk (I used semi – skimmed as this is all I had and it still turned out rich and delicious)
3 cloves garlic (crushed)
1 large onion (diced)
fresh parsley (chopped)
1 tspn ground nutmeg
ground black pepper
dash of white wine
- Pre-heat the oven to 200 degrees celsius/ gas mark 6
- In a small frying pan heat some olive oil and add the onions. Add a dash of salt and fry gently on a low heat
- Peel the potatoes and then thinly slice each potato. Add these to a large mixing bowl
- In a mixing jug pour in the cream, milk and nutmeg. Mix well with a fork and then pour over the potatoes in the mixing bowl
- Add the fresh parsley, crushed garlic, a dash of white wine and ground black pepper to the mixing bowl and then pour in the onions from the frying pan
- Mix everything together with a spoon and then pour the potatoes into a medium oven dish
- Place in the oven for up to 1 hour. I always check on this after 40 mins and if needed turn the oven down slightly
