I am in the land of pork, pork and more pork and so a pork supper it is. This is perfect meal for a real weekend treat. One of the great things about this dish is that it is easy to make and you are not in the kitchen for a long time. A bit of tomato and apple chutney is also great with the pork chops.
Ingredients: serves 2
2 pork chops
broccoli (cut into chunks)
70g butter (and a little extra for the chops)
2 cloves garlic (crushed)
juice of half a lemon
handful of capers
2 tbpsn dijon mustard
black pepper
- Put the broccoli in a pan to boil for around 15 mins
- After 5 mins heat some butter and 1 crushed clove of garlic in a large frying pan. Once heated add the pork chops and leave for around 5 mins
- After 5 mins turn over the chops and heat on the over side for around 7 mins. Add a bit more butter to the pan if needed
- In a small saucepan add the rest of the butter and leave to melt. Once melted stir in the lemon juice and dijon mustard. Add black and capers and leave to simmer for 5 mins
- Drain the broccoli and put back into the pan it was boiling in
- Pour the caper sauce over the broccoli and mix well
- Put each pork chop onto a plate and serve with the broccoli on the side
You can also serve this with potatoes and lemon wedges.
