These are perfect for the working week as they take no time to make. I served mine with a load of asparagus on the side.
Ingredients (makes 4 slices):
asparagus (to serve)
handful of cherry tomatoes (cut in half)
1 sheet puff pastry
ground black pepper
1 pot mascarpone
green pesto
fresh basil
- Preheat the oven to gas mark 5 / 180 degrees celsius
- Roll out the sheet of puff pastry and cut into 4 squares
- Spread the pesto onto the middle of each sheet (leaving enough room around the edges)
- Spread the mascarpone on top of the pesto and then add the cherry tomatoes on top
- Add ground black pepper over each slice and place in the oven for 20 mins or until golden brown
- Once done take them out of the oven and add fresh basil to each slice
- Leave to cool or eat right away
