For me midweek meals have to be all about convenience yet something nourishing. I always admire those who have weekly meal plans scheduled for breakfast, lunch and dinner and while we stick to one big shop a week with a shopping list and a meal plan we don’t have it planned out for the entire week. Our working week can often result in us being out at events or away with work a lot. In fact the last couple of weeks my husband and I have rarely been at home together on a week night with some weeks resulting in both of us using our apartment Monday to Friday as a B&B. By the time it gets to the weekend all we want to do is lock the door, cook delicious food and not leave again until Monday morning! But those nights that we are at home we really try to eat something that feels healthy yet comforting and filling and this Lemon and Parsley Crispy Baked Cod is the perfect dish!
I try and pick up fresh fish whenever possible, usually whenever I pop in my local Galeria Kaufhof. I always make sure to buy some fresh cod and salmon and keep them in the freezer ready for those midweek dinners. The crispy topping is simply made with breadcrumbs, olive oil and plenty of lemon and parsley. Most of which are ingredients that I will usually have at hand! The olive oil drizzled over the breadcrumbs gives the topping a lovely crunch and it really is ready in less than 15 minutes! Most the time is waiting for the oven to heat up (I just need one of those kitchens powered from my smartphone!) and the best thing is that there is minimal washing up. I serve the fish with some quick boiled broccoli or peas on the side with a couple of potatoes cooked in the microwave. Easy and simple as that!
- 2 pieces of cold fillet
- 75g breadcrumbs
- 2 tbsp olive oil
- Small bunch fresh parsley (finely chopped)
- Juice of 1 lemon
- 1 clove garlic (peeled and crushed)
- Salt/ pepper
- Heat the oven to 200C/180C Fan/Gas 6.
- In a bowl mix all the ingredients apart from the cod. Season with salt and pepper.
- Top the breadcrumbs on top of the cod, pressing down slightly so that they are firm and stick on top of the fish. Give the fish a final drizzle of olive oil over the top and place in the oven for 10-12 mins.
