These are really easy to make and taste delicious. The best thing about them is that they come out soft and fluffy. Once they are out of the oven and cooled, make yourself a pot of tea and enjoy on a lazy Sunday afternoon this weekend.
Ingredients:
150g flour
1 tbpsn baking powder
1 tspn lemon extract
juice of half a lemon
200g fresh blueberries
125g butter
50g caster sugar
2 medium free range eggs
- Preheat the oven to gas mark 6/ 180 degrees celsius and line a muffin tin with cases
- Add the butter and sugar to a large mixing bowl. Mix with an electric hand whisk
- Crack the eggs into the bowl, add the lemon juice and extract and mix again with the electric whisk
- Pour in the flour and baking powder and with a wooden spoon combine the mixture
- Stir in the blueberries and mix well
- Pour the mixture evenly into the 12 cases and place in the oven for 20 mins
- Once out of the oven leave to cool
