It feels like summer is on it’s way. I have my Kate Middleton inspired Mac and big sunglasses on and I no longer have to be crammed onto the tram as I can walk home from work in the sunshine. I stopped by the fruit and veg store on my way home today and picked up 2 fresh avocados. Guacamole is easy to make and it made my chili dish that little bit more exciting! I have kept my guacamole simple so that in the future all you need to do is pick up some avocados on your way home and you will probably have everything else in your kitchen.
Ingredients:
2 avocados
1 clove garlic
2 tbpsns olive oil
juice of half a lemon
- Peel the avocados and then chop then up into small chunks around the stone middle
- Place the chunks into a blender. Chop the garlic clove into 3 chunks and place into the blender with the olive oil and lemon juice
- Mix everything in the blender and make sure everything is mixed well and that there are no chunks left. It should look like a creamy texture
- Pour the guacamole into a bowl and serve with some tortilla chips on the side
