Here is a meal to enjoy on a cold evening this weekend. It is also full of plenty of vegetables and low fat cream making this a perfect weekend treat for those January blues.
Ingredients:
1 sheet puff pastry
1 onion (diced)
goats cheese (cut into slices and enough to layer a pie dish)
mushrooms (sliced)
green beans (I added these as they were leftover in my fridge so feel free to add any other green veg)
1 leek (finely chopped)
1 thin slice of butter
olive oil
75ml white wine
1 small pot low fat cream
fresh parsley
2 cloves garlic (crushed)
- Preheat the oven to gas mark 5/ 190 degrees celsius
- In a large saucepan add the onions and garlic with olive oil. Season with salt and pepper and leave on a gentle heat
- Add the butter to the pan, followed by the leeks and green beans. Mix well
- Pour in the white wine and simmer gently for 5 mins
- Add the parsley and then stir in the cream and leave to simmer for another 3 -4 mins
- Take the pan off the hob and add the mushrooms (adding the mushrooms towards the end stops them from turning all mushy)
- Pour the contents from the pan into a pie dish. Layer the goats cheese on top and then cover with the puff pastry
- Place in the oven for around 25 mins or until the pastry has risen and is golden
