Happy Friday! End the week with a bang by enjoying some home made baked burritos. Friday night is my break after a long week of work and healthy eating. These burritos are a real treat.
I use the leftovers of a mid week chilli con carne recipe making this an easy meal for a Friday night and still leaving you with enough time to get ready and go out and party.
Add a simple salsa over the burritos and serve with fresh guacamole and sour cream. Enjoy! x
Ingredients: (makes up to 6)
leftover chilli con carne
1 small pot sour cream
150g basmati rice
handful of grated mozzarella cheese
6 tortilla wraps
1 lemon (cut in half – one half cut into wedges and the other half sliced)
fresh coriander
- Preheat the oven to gas mark 5/ 190 degrees celsius. Line a large baking tray with baking paper.
- Lay out one wrap and in the middle add 2 large tbspn of rice and the same amount for the chilli. Wrap and fold at the bottom and place in a large baking tray. Repeat the process until you have all 6 burritos.
- Spread the salsa over the burritos and scatter the grated cheese on top. Add the lemon slices on top and then place in the oven for around 20 mins.
Serve with guacamole, sour cream and lemon wedges on the side. Garnish with plenty of fresh coriander.
