I love a weekend breakfast. It is what Sundays are all about: lie in, lazy morning listening to the radio, reading the paper and a day to relax and do whatever you want! All shops are closed over in here in Berlin on Sundays which leaves plenty of time to go for a long Sunday walk or to a cafe.
During the week it is just a mash dash out of the flat in the mornings and long working days. Which is why the weekend is the perfect time to enjoy a relaxing breakfast! I love french toast, or eggy bread as many of us call it! It is so simple to make and a real treat topped with some smoked salmon and avocado.
Ingredients: serves 2
2 slices wholemeal bread
2 medium free range eggs
3 tbpsn semi skimmed milk
2 small slices butter
Black pepper
Smoked salmon
1 avocado (peeled, stone removed and sliced)
Juice of half a lemon
- Heat the butter in a large frying pan. In a small bowl beat the eggs, milk and pepper. Cut each slice of bread in half and then soak the bread in the egg mixture.
- Once the pan is hot add the eggy bread and cook on each side for around 3 minutes or until golden.
- Lightly dry the french toast on some kitchen paper and then plate up. Top with the smoked salmon and a drizzle of lemon juice. Scatter some chopped avocado on top and enjoy!
