Ham, Egg and Mushroom Muffins

  • 5 eggs
  • 50ml milk
  • 300g mushrooms (diced)
  • 100g cooked ham (sliced into small pieces)
  • Fresh parsley (finely chopped)
  • Salt/ pepper
  1. Preheat the oven to 200°C/180°C Fan/Gas 5.
  2. Line a muffin tin either with muffin cakes OR grease with butter. This will make 6 ham and egg muffins.
  3. In a mixing bowl crack in the eggs and whisk. Add all other ingredients apart from salt and pepper and mix well until combined. Season with plenty of salt and pepper.
  4. Pour the mixture in the muffin cases and bake for 12-15 mins. Once done leave to cool for 5 mins and if you are not using muffin cases they should easily slot out of the muffin tin holes. Leave to cool for another 2-3 mins and either eat warm or cool completely before placing in the fridge in an airtight container. Will keep in the fridge for 3 days.
