Lemon and Parsley Crispy Baked Cod

  • 2 pieces of cold fillet
  • 75g breadcrumbs
  • 2 tbsp olive oil
  • Small bunch fresh parsley (finely chopped)
  • Juice of 1 lemon
  • 1 clove garlic (peeled and crushed)
  • Salt/ pepper
  1. Heat the oven to 200C/180C Fan/Gas 6.
  2. In a bowl mix all the ingredients apart from the cod. Season with salt and pepper.
  3. Top the breadcrumbs on top of the cod, pressing down slightly so that they are firm and stick on top of the fish. Give the fish a final drizzle of olive oil over the top and place in the oven for 10-12 mins.
