Chicory, Fennel and Apple Remoulade

Serves: 4-6
  • 1 chicory head (finely sliced, shredded)
  • 1 red apple (skin on and coarsley grated)
  • Half a fennel (finely sliced, shredded)
  • 2 tbpsn small capers
  • 3 small gherkins (finely sliced)
  • 1 tspn wholegrain dijon mustard
  • 1 small pot crème fraîche
  • Juice of half a lemon
  • Small bunch fresh parsley (finely chopped)
  • Salt/ black pepper
  1. Mix together the crème fraîche, mustard and lemon juice in a large mixing bowl. Add the rest of the ingredients and mix well until everything is well combined. Season with a bit of salt and pepper.
