I am still recovering from a busy few weeks and so dinner last night was something quick and easy. This is one of my favourite meals to make during the week. Not only is it easy to make but it is also light and refreshing. You can add more or less what you want to this dish and is a great way to use up any leftovers in your fridge. You do not have to use all my ingredients listed below.
Ingredients:
frusili pasta (or any other kind) (however much you like!)
ball of mozzarella (sliced)
spring onions (finely chopped)
handful of cherry tomatoes (cut in half)
2 tbpsn capers
1 tbpsn pesto
juice of half a lemon
ground black pepper
handful of olives
parma ham (roughly chopped)
- Add pasta to boiling water and leave to cook
- In the meantime chop all your ingredients
- Drain pasta and pour back into the pan. Add the lemon juice and pesto and stir
- Throw in all the rest of the ingredients and season with black pepper
- Serve with some fresh basil
