This is an easy curry to make after work. Nice and simple – perfect for the working week. This is typically made with lamb but seeing as lamb is near impossible to find in Germany I made this with chicken instead.
Ingredients:
2 chicken breasts (chopped into small chunks)
2 cloves garlic (crushed)
1 red pepper (chopped into thin slices)
1 onion (diced)
1 tspn ground ginger
2 tspns garam masala
2 tbpsns tomato puree
4 tomatoes
1 tsspn crushed chilis
1 tspn ground paprika
1 tspn tumeric
fresh coriander
juice of half a lemon
ground black pepper
2 tbpsn greek yoghurt
- Heat the oil in a large pan and add the chicken. Keep turning the pieces over
- Add the tomatoes to a bowl and pour over some boiling water. This is my favourite way to prepare tomatoes. Leave the tomatoes in the boiling water for 2 mins and then when you take them out of the water the skin will just easily peel off
- Add the onions and garlic to the pan with the chicken and add a pinch of salt and the juice of half a lemon
- Chop the peeled tomatoes into small cubes and then add to the pan. Stir in the tomato puree and put on a medium/ high heat
- After 10 mins add the tumeric, garam masala, ginger, paprika and crushed chilis. Mix well
- Add the red peppers, stir in the greek yoghurt and leave to simmer for 10 mins. Stir every now and then
- Once the chicken is cooked and the sauce is boiled down, take off the heat and stir in some black pepper and fresh coriander
- Serve with some basmati rice, lemon wedges and more fresh coriander
I add 1 tspn of tumeric to the rice once cooked and mix well with a fork.
