Spring recipe! This dish has every spring season feel to it. The spring onions and cherry tomatoes make it refreshing and the pesto and creme fraiche give it that added twist. It is easy to make, takes no time and is delicious. Perfect for the working week or a quick and easy meal during a busy weekend.
2 chicken breasts (each cut in half)
Spring onions (finely chopped)
Cherry tomatoes (chopped in half)
Ground black pepper
Half a lemon
4 tablespoons creme fraiche
2 tablespoons green pesto
- Heat some olive oil in a large frying pan. Once it is heated add the chicken breasts with the lemon and peppper and leave to cook. Keep turning over so each side cooks evenly and making sure it cooks all the way through.
- Then add the spring onions and cherry tomatoes. Once the chicken is properly cooked through add the creme fraiche and stir properly.
- Add the pesto and make sure that it is mixed in properly.
- Leave to simmer for 5 mins and then serve.
You can serve this with boiled potatoes, roast potatoes, pasta or a salad.
