All this talk about the Queen’s upcoming Diamond Jubilee got me thinking about ‘typically’ British food. If there is one food to associate with the Queen and her Jubilee then it has to be coronation chicken. This retro dish is popular at parties, will be served at street parties for the diamond jubilee and can be found in any supermarket/cafe/bakery as a sandwich filling. This dish was first made for the Queen’s Coronation as a celebration of the British Empire and all the exotic fruits and spices that came from it. It is still a popular dish today.
I do not use sultanas or apricots in mine but feel free to add a few pieces when serving up.
2 tbpsn mild curry powder
100ml double cream
1 tspn ginger
juice of half a lemon
ground black pepper
a dash of wocester sauce
fresh coriander (to serve)
- Heat a medium sized pan with olive oil and add the chicken. When nearly cooked add the lemon juice and a dash of wocester sauce. Once cooked leave to the side
- In a large mixing bowl add the mayo, cream, curry powder and lemon juice. Mix well and add the black pepper
- Stir in the ginger and mix well
- Add the chicken to the bowl and make sure the chicken is mixed well and covered
- Place in the fridge until needed
Best served cold. You can have this as a filling for your sandwiches or jacket potatoes or serve at a party as part of the buffet. I enjoy mine with a rice salad of tomatoes, green pepper, cucumber and sweetcorn.
