This is really easy to make and one to just pop in the oven. You can add any other kind of vegetables to this dish and can serve with some potatoes on the side. I recommend serving this with some ciabatta bread to dip into all the juices at the bottom of the dish.
Ingredients:
Prawns (whichever you prefer and prepared accordingly. If frozen then make sure they are defrosted)
1 aubergiene (sliced into small chunks)
1 courgette (thinly slice)
1 lemon
1 leek (chopped)
2 cloves garlic (crushed)
1 onion (cut into large thin slices)
handul of cherry tomatoes (halfed)
handful of olives
25g butter
olive oil
crushed chili flakes
1 tspn ground nutmeg
- Put the prawns into a bowl with olive oil and the chili flakes. You can leave the prawns in the marinade earlier during the day or do what I do and prepare them as soon as you start to cook. Once you have done this just pop them into the fridge until needed later
- Preheat the oven to gas mark 6/ 190 degrees celsius
- Put the augerbienes, garlic and courgettes into a large oven dish. Add plenty of olive oil and place in the oven. Leave for 20 mins
- After 20 mins give the aubergies and courgettes a quick stir and then add the onions to the dish. Add a pinch of salt, some black pepper and more olive oil if needed. Place the dish back into the oven
- Take a small saucepan and put on a medium heat. Add the butter and leave to melt. Then add the juice of 1 lemon. Add some black pepper and a dash of ground nutmeg and stir well.
- Add the leeks to the saucepan and leave to simmer gently for 3-4 mins
- Take the dish out of the oven and add the cherry tomatoes and olives. Turn the oven down to gas mark 4/ 160 degrees celsius
- Pour lemon sauce and the leeks into the oven dish
- Take the chili prawns out of the fridge and also add to the oven dish
- Place in the oven for another 10 mins. Once out of the oven leave to stand for 5 mins
- Serve with some ciabatta bread or baked potatoes
