I have eaten way too much this past week. With it being my birthday and then having family visit over Easter I have eaten out every night for about a week. I do not want to see any more red meat or German food for a while and so last night I made some chicken salad wraps. I always make this after a weekend of over indulging and lived off this for about a week after Christmas. It is also a perfect summer time meal so once it gets hot and sunny be sure to make this one night after work.
There is nothing to it really. Cook some chicken and add to a bowl of lettuce, chopped tomatoes, sliced cucumber, feta cheese, olives and whatever else takes your fancy. Add some sour cream to the wraps and you have yourself a light and refreshing meal.
