These are quick, easy and taste so good. What more do you need? You can always add some of my salsa and guacamole to go with the fajitas.
Ingredients:
1 onion (diced into large slices)
2 tomatoes (chopped into small chunks)
1 red pepper and 1 green pepper (chopped into large slices)
1 tbpsn cumin
2 tbspn paprika
1 tpsn crushed chilis
1 tbpsn wocester sauce
2 chicken breasts (chopped)
2 cloves garlic (crushed)
fresh coriander
1 lemon
sour cream
wraps
handful of mushrooms
- Heat olive oil in a large pan and add the chicken
- Then add the onions and 1 tbpsn salt. Add the juice of half a lemon and crushed garlic. Leave to simmer for a few mins
- Add the wocester sauce and the peppers
- Then add the cumin, paprika and chilis
- Stir in the mushrooms. Mix well. Add more oil if needed
- Leave to simmer away on a high heat. Once the mixture is ‘dried out’ and all the juices are gone – you can serve
- Add the chopped tomatoes to a serving bowl and add the chicken fajitas. Mix together and garnish with slices of lemon and fesh coriander
- Serve with tortilla wraps and sour cream
