This is a regular on my weekday meal list. I find that meals have to be simple and light during the week, otherwise I will be too lazy to cook at all. Chicken caesar salad is a perfect weekday treat. Make sure you add this to next weeks meal plan!
Ingredients:
Chicken (leftover from a sunday roast, or 2 chicken breasts chopped and cooked in a pan with olive oil for around 20 mins and cooked through)
1 small pot creme fraiche
juice of half a lemon x 2
anchovies (1 small tin is enough)
handful of fresh lettuce leave or chopped up lettuce
1 tomato (diced)
half a cucumber (sliced)
grated parmesan (plus extra for serving)
olive oil
black pepper
- If you are cooking the chicken and not using leftovers then heat a pan with olive oil. Chop 2 chicken breasts and add to the pan with juice of half a lemon. This will take around 20 mins to be cooked through
- In the meantime add the creme fraiche to a mixing bowl with the olive oil. Add black pepper, anchovies and juice of half a lemon and mix well. Stir in the grated parmesan and then leave to one side
- Lay out the salad leaves, tomatoes and cucumbers onto each serving plate
- Once the chicken is done add the chicken on top of the salad and then pour over the creme fraiche dressing
- Garnish with some extra parmesan and fresh basil leaves
Serve with some bread and more olive oil on the side
