Firstly, this is not Korean Fried Chicken not because I don’t like the delicious, crunchy and lightly crispy bits of tender chicken that are gently spiced but because in my opinion the marinade on these Korean Chicken Wings is mouth wateringly good enough. Besides, fried chicken is different and anyone who turns their nose up at it just hasn’t experienced it properly. My fondest memory is when I was in New York at Hanjan. Their spicy and tangy bits of crisp chicken were so good but it was here that I also had marinaded chicken and this was incredibly soft…
Weeknight Dinners
Hotdogs with Balsamic Tomatoes and Jalapeño Mayo
It seems that spring is finally in full swing over here in Berlin and there is the start of that summer feeling. I love this time of the year where the restaurants and bars open up their terraces and the streets are filled with people eating and drinking, I get to eat dinner on my balcony and spend the evenings sipping on an aperol spritz. I love it and the sunshine these last few days has definitely put in the BBQ spirit! Ah, hotdogs! An American classic…
Creamy White Asparagus and Pork Pasta
I have made no secret of my love for asparagus, especially the white kind that is hugely popular in Germany. The other week I picked up my first lot of asparagus of the season and made a simple but delicious White Asparagus with Cured Ham and a Chive Sauce. The smokey ham goes so well with the delicate white asparagus and the chive sauce has plenty of fresh lemon juice to add that almost sour kick to the dish. I like to plain boil my white asparagus with a pinch of salt…
Tomato, Mozzarella and Pesto Hasselback Chicken
Any dish that can be thrown into the oven and left to cook is a winner for me. I do love one pan recipes and it is why pasta works so well. A Blue Cheese, Broccoli and Walnut Tagliatelle or a Chilli, Prawn and Rocket Linguine can be put together in minutes. If I am wanting to cut down on the number of pasta dishes that week but still want that easy and quick recipe then Courgetti with Meatballs is a great midweek meal and perfect to pack in some extra veg to your diet….
Blue Cheese, Broccoli and Walnut Tagliatelle
A go to pasta dish is pretty much a staple part of our midweek meal plans! It can be thrown together in minutes and requires mininal effort. I also love pasta due to how versatile it is as you can add any vegetables, sauce, meat, fish or nuts and really mix it up a bit. One of my favourite quick meals is a Leek and Spinach Spaghetti Carbonara. There is something so comforting about sitting down with a bowl of this classic dish….
Baked Cod with Tomatoes and Olives
Fresh baked white fish is absolutely delicious and one of my favourite things to eat! When taken out of the oven and piping hot, the fish flakes into mouthwatering, silky chunks. When I first moved to Berlin I was a little disappointed to find that there was a lack of fresh fish in the supermarkets. But that was back in 2008 and German supermarkets have significantly improved since then! After a few years living in Berlin I started to realise that I was approaching German supermarkets in the wrong way….
Classic Chilli Con Carne
I will call this a Classic Chilli Con Carne but I won’t call it traditional. In fact, there is nothing typical or traditional about this Chilli Con Carne and the reason being is because this is a British home cooking favourite. I started to wonder if we had done this dish a little unjustice. That we have sort of given it the full lasagne and stroganoff treatment by taking dishes that became popular in the 70s and 80s and not really doing much to them since. But isn’t that why we like it?…
Chilli, Prawn and Rocket Linguine
A lot of people ask me when I have the time to cook and prepare blog posts. I plan a week ahead at the weekend for the following weeks blog posts and daily updates. Hootsuite means that I can schedule ahead all my social media and I also schedule my new blog posts. The photography part is difficult but if I have made leftovers I photograph the dish the next day with better light before popping them in the freezer or packing up for lunch. But the key to me being able to cook lots of delicious food is through a weekly meal plan and a big Saturday shop….
