It was my birthday yesterday and in typical German style I was expected to bake my own cake to bring into the office. My friends in the UK also found it crazy with one of them replying to my ‘Baking my own birthday cake’ tweet as ‘Saddest tweet ever’. However, when in Germany … I baked a carrot cake with cream cheese frosting that seemed to go down well with my colleagues.
Ingredients:
250ml vegetable oil
150g caster sugar
50g brown sugar
1 tbpsn cinnamon powder
1 tbpsn baking powder
25og flour
chopped walnuts
250g carrots (about 3 large carrots)
juice of half a lemon
3 large free range eggs
Topping:
250g cream cheese
150g butter
75g icing sugar
- Heat the oven to gas mark 4 /180 degrees celsius
- Grate the carrots using a cheese grater into a bowl
- Spread melted butter around a cake tin and then line with the baking paper
- Place the oil, sugar and lemon juice into a large mixing bowl and mix with an electric hand mixer
- Add the eggs and mix again. Then fold in the flour, baking powder and cinnamon powder. Mix with a wooden spoon
- Then add the carrots and walnuts and mix again
- Add the mixture to the cake tin and bake for 40 mins or until golden brown and firm to touch
- Leave to cool
To make the topping mix everything together with an electric whisk and then spread onto the cake once it is cooled. Add some walnuts on top.
