These are really easy to make and perfect for during the week or an easy weekend meal. Enjoy!
Vegetarians: These are just as good without the parma ham!
Ingredients:
5 small shallots (finely chopped)
100ml white wine
70ml balsamic vinegar
goats cheese (about 2 or 3 slices for each puff pastry slice)
parma ham (4 slices in total)
black pepper
1 sheet ready rolled puff pastry
dried basil
half a lemon
- Preheat the oven to gas mark 5/ 190 degrees celsius
- Heat some olive oil in a small/ medium saucepan and add the shallots
- Then add the white wine and balsamic vinegar. Put the pan on a high heat and leave to boil down completely –> around 25 mins
- Once the shallots are done, roll out the puff pastry and cut into 4 squares
- Spread the caramelised onions into the middle of each square and spread out towards the sides (leaving a little room around the edges)
- Add 2 or 3 slices of goats cheese on top of each puff slice
- Squeeze the lemon over the 4 slices and top with the dried basil and black pepper. Top with a slice of parma ham
- Place in the oven for 20 mins or until the edges are golden brown
- Once out of the oven serve with a fresh green salad
