Tomato Relish:
5 tomatoes (peeled and finely diced)
100ml white wine
1 tbpsn balsamic vinegar
3 shallots (finely diced)
2 cloved garlic crushed
- Add everything to a medium sized saucepan with olive oil. Put on a high heat and boil down for 20 mins.
- Place in fridge until needed
Spicy Mayo:
2 tbpsn mayonnaise
1 tbpsn tomato puree
1 tbspn parprika powder
a pinch of cumin
a small amount of lemon juice
- Mix everything together in a bowl. Place in a ramekin and put in the fridge until needed
Burgers:
5oog mince (good quality if you can get it)
burger buns
gherkins, lettuce and tomatoes as a garnish
1 tbpsn wocester sauce
1 medium free range egg
1 onion (finely chopped)
1 tbpsn butter
mature cheddar cheese
- Heat the butter in a pan. Cook the onions
- Add the mince to a bowl and add the wocester sauce and egg. Mix well
- Add the onions to the mince and mix well. Roll into patties and then flatten out to make the burgers
- Heat some sunflower oil in a large frying pan. Once this is heated add the burgers and fry on each side for around 3 mins
- Add to the buns with a slice of mature cheddar cheese
- Add the garnish next to the burger
